Why is Sodium Benzoate only effective in acidic products?
In acidic conditions (below pH 4.5), Sodium Benzoate converts into its active form, benzoic acid, which can penetrate microbial cells and inhibit their growth. It's much less effective in neutral or alkaline environments.
This combination should be avoided. In an acidic solution, Sodium Benzoate can react with Ascorbic Acid to form benzene, a known carcinogen, especially in the presence of heat and light.
Can I use it in a product that also contains Vitamin C (Ascorbic Acid)?
Sodium Benzoate is most effective against yeast and bacteria in acidic environments. Potassium Sorbate is better at inhibiting molds and is effective in a wider pH range (up to pH 6.5). They are often used together for broad-spectrum protection.
What is the difference between Sodium Benzoate and Potassium Sorbate?
This can happen if the solution was not mixed thoroughly or if the concentration was too high for the solubility at that temperature. Ensure it's fully dissolved in water before adding to the main batch, and avoid saturation.
